The Macallan went above and beyond to control even aspect of this bottling. First, they picked out perfect American and European oak barrels and dried them for two years. These special barrels were then sent to Spain, where Sherry producers used them to age Oloroso Sherry for two years under the watchful eye of the Macallan. Once the barrels had taken on the perfect sherry influence, the barrels were sent back to Macallan, filled with their single malt, and allowed to age for 25 years. The spirit is surprisingly fresh for such a mature bottle, with lovely notes of citrus and leather, tobacco, baking spices, cinnamon and stone fruits. An exceptional example of the sherry-influenced spy side dram. Laying undisturbed in the same casks for a quarter of a century, this distinguished single malt is matured exclusively in Oloroso sherry seasoned oak casks from Jerez, Spain. During this time the maturing spirit transforms to create this luxurious single malt whisky characterised by its rich flavours of vanilla, dried fruits and ginger spice with a long finish and rich mahogany colour.
